BANANA bread was a firm favourite in the pandemic but, along with pub quizzes, we all couldn’t face them post lockdown.
These days however, most of us have had enough distance that we’re open to reincorporating the sweet treat into our lives.
The good news is that you can bake up your own and this time, there’s an air fryer recipe.
Foodie influencer shared her simple air fryer banana bread recipe and people could not wait to give it a go.
Laura Nightingale, who shares her baking tips on Instagram as @cakeontherun, uploaded a step by step video to make the delicious treat.
The straight forward recipe can be done using the fashionable air fryer and uses just four ingredients.
All you need to knock up your own is; 150g self raising flour (or plain with 1 tsp baking powder), 100g fizzy water or lemonade, half a mashed banana and 1tsp sugar or sweetener.
The simple recipe takes no time at all to whip up and will give you four slice of the yummy loaf.

First up Laura said: “Mix flour, lemonade and sugar together to form a dough ball.
“If it’s too dry add more liquid or too wet add more flour. Fold in mashed banana.
“You can add a few slices of banana to decorate the top of you fancy.”
Next up she said to flatten the dough onto a plate and smoosh it into the shape of a loaf.
Then she said: “Air fry on 200 for 12 mins (or oven bake for 20 mins or microwave for 90 seconds) cook for longer if wet in the middle.”
Once it comes out of the air fryer, all you have left to do is slice up the banana bread and eat it straight away.
