IF you’re still sticking to your New Year’s resolution of eating healthy, this recipe might be for you.
A food fanatic has shared her high-protein pasta recipe with her followers.
In her video, Marianna Moore (@mariannas_pantry) demonstrated how to make her healthier alfredo pasta.
“Point of view: You’re craving alfredo pasta but trying to eat more protein,” she wrote in the clip.
The TikToker revealed that her dish, which makes about six servings, amounts to 120 calories per serving with 15 grams of protein.
For her first step, Mariana cooked a box of pasta per the package’s instructions.
“While the pasta cooks, bring another large pot of water to the boil and add your cauliflower florets,” she advised her viewers.
Marianna recommended using two cups of cauliflower florets and boiling them until “they are soft and break apart with a fork.”
After draining them and letting them cool, she measured out one and a quarter cups of low-fat cottage cheese and two-thirds of a cup of parmesan cheese.
She added the cheese to a blender with three teaspoons of minced garlic, a teaspoon of onion powder, a teaspoon of dried rosemary, and two teaspoons of salt.
Marianna also added a cup and a quarter of almond milk to the blender along with the cauliflower.
She recommended adding your preferred amount of pepper to the mixture before blending.
“Blend on high until smooth and creamy, add more salt and pepper if needed,” she said.
“Add pasta and sauce back to the pasta pot and mix together until well combined.”
Marianna advised her followers to store any leftover sauce in an airtight container in the fridge.
For a gluten-free option, you can even substitute the pasta with a gluten-free option or more cauliflower florets.
