The mum-of-one regularly shares videos of recipes where she has stretched her pennies on food shops to get the most bang for her buck.
She said: “I love, love, love creating meals and recipes using the slow cooker.
“Not only is it super easy and low maintenance, but it is cheaper!”
Sophie added that she finds making recipes in the slow cooker “a lot of fun” because it stops you from opening and closing the oven lots in the summer and is low maintenance.
For one video, the 29-year-old curated five summer recipes to be done in the slow cooker with ingredients just from Aldi, such as pulled pork burgers, chicken shawarma and noodles.
She used a Morphy Richards 6.5 litre crockpot.
Chicken Shawarma
The first recipe was chicken shawarma which involves cooking seasoned chicken thighs in the slow cooker for four hours.
Using spices like paprika, cayenne pepper, ground coriander and garlic paste, she advised to marinade the chicken “as early as possible” in the day to let the flavours soak in.
Sophie served the tender meat on a flat bread with plenty of veggies and tzatziki to dip.
Honey Garlic Pork Noodles
The YouTube chef seared a pork shoulder before chopping it into chunks in the slow cooker.
She mixed it in the ceramic dish with soy sauce, garlic paste, ground ginger, a squirt of ketchup and honey.
To complete the dish, she poured egg noodles and boiling water in the pot to mix with the tender pork until it was ready to serve with spring onions.
Vegan Chilli Con Carne
Chilli Con Carne is one of the more popular dishes to create in a slow cooker.
Sophie put a vegan twist on it and said it’s a “very easy recipe” that can be adapted based on dietary needs.
The mum cooked her vegan mince, veggies and beans in the slow cooker for a collective three hours, before serving it up on a tortilla with rice and cheese.
Coconut Split Lentil Curry
Sophie used red lentils, vegetables, spices and stock to create a curry base that she could leave to cook in the slow cooker.
Once it was almost ready, she stirred in coconut milk to give the curry a creamy texture.
She advised that people who are super busy can put it in the cooker on low for six hours.
Cider Pulled Pork Sliders
The final dish involved slow cooking a pork joint with cider and seasoning for two hours.
Once it was good to go, Sophie layered it on burger buns with a homemade slaw.
She said the dish would “work perfectly with chicken as well if you don’t eat pork”.
